Make gourmet popcorn
Serves 4
You will need:

50g plain popcorn
- 30g dried apple crisps (shop-bought or homemade*)
- 50g butter
- 70g light brown sugar
- 2 tbsp honey
- ¼ tsp bicarbonate of soda
- 50g dark chocolate
*To make your own apple crisps, core and carefully slice a large apple very thinly. Bake the apple slices in the oven at 160C for 40 minutes.
1. Put the popcorn in a large bowl and set aside.
2. Preheat the oven 180C and line a baking tray with greaseproof paper.
3. Put the apple crisps in a food processor and blitz into a powder. Alternatively, put them in a freezer bag, seal the bag and use a rolling pin to crush the crisps. Pour the apple powder over the popcorn.
4. Put the butter, sugar and honey in a saucepan over a medium heat. Stir until the mixture comes to a boil. Reduce the heat and simmer for 3-4 minutes.
5. Remove the sugar mixture from the heat and add the bicarbonate of soda. The mixture will bubble and form a thick foam. Pour this over the popcorn.
6. Use a spoon to mix everything together until the popcorn is fully coated. Be careful! The mixture will be very hot.
7. Pour the popcorn out onto the baking tray in a single layer. Bake for about 15 minutes until just starting to darken in colour. Remove from the oven and allow to cool.
8. Meanwhile, put the chocolate in a heatproof bowl and microwave for 30 seconds until melted.
9. Break apart the popcorn pieces and pour over the melted chocolate. Leave to cool. Serve once the chocolate has hardened – or store in an airtight container for 2-3 days.
