Make chocolate chip pancakes
Serves 4
You will need:
- 200g self-raising flour
- 1.5 tsp baking powder
- 1 tbsp caster sugar
- 3 eggs
- 60ml milk
- 25g butter (melted), plus extra for cooking
- 200ml milk
- 100g chocolate chips
- Whipped cream
- Maple syrup
Method
1. Place the flour, baking powder, caster sugar and a pinch of salt in a large bowl and mix together.
2. Add the eggs, melted butter and milk. Whisk together until you have a smooth mixture. Fold in most of the chocolate chips.
3. Heat a small knob of butter in a large, non-stick frying pan over a medium heat. Use a ladle to pour in a round of batter, approximately 8cm wide.
4. Cook the pancake on one side for about 1-2 mins or until lots of tiny bubbles start to appear and pop on the surface. Flip the pancake over and cook for a further minute on the other side, then remove from the pan.
5. Repeat until all the batter is used up
6. Serve your pancakes stacked up on a plate. Drizzle over some maple syrup, scatter the remaining chocolate chips on top and finish with a dollop of whipped cream!
