Make apricot tartines
Serves 4
You will need:

1 tin apricots
-
8 tbsp ricotta
-
4 slices rye bread
-
1 tbsp runny honey
-
Handful mint leaves
Method
1. Drain the apricots and slice into wedges.
2. Spread 2 tbsp ricotta on each slice of rye bread.
3. Add the apricot slices and drizzle the honey over the top.
4. Chop the mint leaves and sprinkle over the tartines.
5. Serve and enjoy!
